October is here! I love this time of year. There’s so much beautiful fall produce at the farmers market it makes my eyes light up! Here’s this week’s meal plan for our family. Let me know what you think!

BREAKFAST:

Smoothies for breakfast, of course! This week we’ve got Green Breakfast SmoothieTropical SmoothieBright Green Smoothie and Chocolate Almond Butter Smoothie. Then for weekend brunch we’re making these delicious Whole Wheat Cinnamon Banana Pancakes!

Snacks this week are going to be Apple Applesauce MuffinsGood Morning Protein CookiesSuper Healthy Granola and Apple Cheese Wraps. Simple, filling and delicious.

For lunch this week we’re making Apple Pie PaniniCoconut Cream Baked OatmealUncrustables and PBJ Pancakes Sandwiches

DINNER:

Sunday: Roast Chicken with Caramelized Lemons, Cherry Tomatoes and Olives with Mascarpone Mashed Potatoes and Air Fryer Okra for Sunday supper.

Monday: Spiced Carrot Cauliflower Soup with Spinach Cheddar Chive Scones for a warm meatless Monday.

Tuesday: Asian Chicken Salad with Scallion Pancakes from One Potato Box

Wednesday: Slow Cooker 12 Layer Lasagna with a Caesar salad on the side. This lasagna is SO easy to make and you’ll most likely have leftovers. The best!
