Do you remember how excited you got as a kid to eat raw cookie dough? And have you ever seen a 5 year old running around and screaming for more after getting her first taste of it?

Ironically, it initially required some major persuading on my part to get my kids to try these Raw Cookie Dough Bites (mentioning that they contained chocolate ultimately closed the deal). Yet after her first bite, Gemma was darting around the kitchen begging me for more. And more. Until I had to cut her off.

Even though his sister was the wild one, Kenya was no less taken with his first cookie dough encounter. While I was distracted by Gemma’s animated pleading, he just stood quietly next to the baking sheet chomping down one raw bite after the other, endlessly content.

It all makes sense to me. I was the kid who would have rather eaten an entire log of slice-and-bakes raw than bothered with baking them, so cookie dough is in my blood — and apparently now my kids’ as well. 

These raw cookie dough bites are as close to the real thing as you can imagine, and the best part about them is that they contain no raw eggs or refined sugar, are made with protein packed nuts, and filled with fiber from old fashioned oats. I’m happy to say that they’re actually good for you.

Cookie Dough Bites

If you're looking for just a bite (or two) of a classic treat this Halloween — or any time of year for that matter — take a few minutes to whip up these healthy heavenly morsels.

Ingredients  

  • 3/4 cup old fashioned oats
  • 3/4 cup walnuts
  • 1/2 cup raw cashews
  • 2 tablespoons honey
  • 1/2 teaspoons vanilla extract
  • 1 tablespoon coconut oil
  • 1/4 cup chocolate chips (semi sweet or vegan)

Instructions 

  • Grind the oats and nuts in a food processor for 1 minute until finely ground. Then add the honey, vanilla, coconut oil, and chocolate chips. Pulse to combine.
  • Using a 1 teaspoon measure, roll into balls.
  • To Freeze: Place balls in a single layer on a cookie sheet and freeze for 20-30 minutes. Transfer balls to a zip top freezer bag or glass container, label, and freeze for up to 3 months.
