Yellow Squash Carrot PureePin

Growing up my mother made the most heavenly yellow squash dish that was so simple, yet mouthwateringly delicious. I still make it for myself and 
sometimes I add steamed carrots like I did in this recipe. There are only 3 ingredients, but when they’re packed with this much flavor, why 
would you need anything else?

Yellow Squash and Carrot Puree

Ingredients  

  • 1 cup chopped carrots
  • 1 cup chopped yellow squash
  • 1 tablespoon chopped onions

Instructions 

  • Place the carrots in a steamer pot over boiling water for 2 minutes.
  • Add the onion and yellow squash and continue to cook for 4 more
  • minutes or until vegetables are fork tender.
  • Place the ingredients in a food processor and puree until smooth.
  • Cool and serve.
  • *Place in Baby Cubes and freeze.

  2. Hi, I’m introducing my 5 month old baby boy to pureed foods. Loved a bunch of your recipes, but was wondering if there was a way to tell for what ages these were appropriate. Thanks!

  3. Hi Maggie! In general, when your baby is first starting out on solid foods, you should only introduce 1 solid food at a time, and serve that for about 3-4 days to watch out for any allergic reactions. After he has tasted several foods with success, then you can start mixing them together. So a 5 month old could eat this puree if it is thinned out enough, and if he has already tried yellow squash and carrots on their own with no negative reactions. Hope this helps!

  4. How long will this recipe stay good for in the freezer? My daughter is 2 weeks old and we want to get a head start with our garden veggies for her.

  5. I have used this recipe to great success in a different way then what I think was intended. I make this puree and place a piece of fish or chicken cooked simply on top of it. It is a simple and delicious supper. Use the puree like mashed potatoes is the idea. I do not have children– substituting the puree for mashed vegetables makes for a fantastic meal for adults.
