Graham Cracker Chocolate Dipped Ice Cream Sandwiches

Ingredients  

  • 2 1/2 pints ice cream, softened (any flavor you love)
  • 9 graham crackers
  • melted chocolate or magic shell (linked below)

Instructions 

  • Line an 8 x 8 inch baking dish with parchment paper making sure the edges come up on two sides.
  • Spread the softened ice cream evenly in the lined pan and place in the freezer overnight.
  • Break the graham crackers in half so that you have 18 squares.
  • Using the edges of the parchment paper, lift the ice cream on to a cutting board.
  • Slice the ice cream into 9 equal squares and sandwich between two graham cracker squares. If desired, spread melted chocolate on all the graham cracker squares and press the chocolate side onto the ice cream.
  • Place the ice cream sandwiches back in the freezer for at least 10 minutes before serving.

Notes

  • The trick for perfect ice cream squares is easier than you think. Soften the ice cream a bit and spread evenly into a parchment lined 8x8 inch baking dish. Be sure to leave parchment paper hanging over two sides. Refreeze the ice cream overnight and then lift it out using the parchment paper. Finally, cut it into graham cracker shaped ice cream squares.
  • The best chocolate for this recipe, will be this Magic Shell! When it hits the cold ice cream it will turn into a hard shell and provide a delicious and satisfying chocolate crunch when you bite into the ice cream sandwiches.
  • Don't forget to refreeze after you make the sandwiches. It is ice cream after all. The longer it's at room temperature, the faster you'll have a big mess. Place the completed ice cream sandwiches in the freezer for at least 10 minutes so that they'll refreeze and be less messy to eat!
