  • 1 pound ziti pasta, uncooked
  • 1 large zucchini, grated, about 2 cups
  • 1 large carrot, grated, about 1 cup
  • 1 red bell pepper, diced, about 1 cup
  • 1 small onion, finely diced, about 1 cup
  • 1 garlic clove, minced
  • 1 28-ounce can diced tomatoes
  • 1 15-ounce can tomato puree (or sauce without seasonings)
  • 1 teaspoon kosher salt
  • 1/2 cup grated parmesan cheese
  • 3 cups grated mozzarella cheese, divided
