Chocolate Covered Crispy Rice Bites

Crispy rice cereal enveloped in almond butter with a touch of sweetness and finally dipped in decadent chocolate... what's not to love?

Ingredients  

  • 1 cup nut or seed butter of choice (peanut butter, almond, cashew or sun butter work)
  • 1/2 cup butter, softened
  • 2 cups rice crispy cereal
  • 3/4 cup powdered sugar
  • 1 cup chocolate chips
  • 1 tablespoon coconut oil

Instructions 

  • Thoroughly combine nut butter and softened butter with a spatula until creamy.
  • Add powdered sugar and stir to combine. Then, carefully fold in rice crispy cereal.
  • Roll rice crispy mixture into one inch balls and place on a parchment lined baking sheet. Refrigerate balls until set, about 20 minutes.
  • Melt the chocolate chips and coconut oil in the microwave in 30 second increments or over the stovetop and stir to combine. 
  • Drizzle or dip the balls in the chocolate, cool and eat.
