Fall Farmers Market Salad

There's nothing better to me than a huge salad with fresh ingredients from the farmers market! This Fall Farmers Market Salad is filled with the best produce this season has to offer.

Ingredients  

  • 1 pound arugula (or favorite salad greens)
  • 1 pear, cored and sliced thin
  • 1/2 cup pomegranate seeds
  • 1 persimmon, sliced
  • 1/3 cup walnuts, toasted
  • 1/4 cup feta cheese, crumbled

Dressing:

  • 1 small shallot, finely diced
  • 3 tablespoons fig or regular balsamic vinegar
  • 1/4 cup olive oil
  • 1/4 teaspoon kosher salt

Instructions 

  • Place all of the salad ingredients in a large bowl.
  • Place the vinaigrette ingredients in a jar and shake vigorously to combine,
  • Drizzle some of the vinaigrette over the salad and toss to just coat the salad.
