Starting with the purple layer, place all the ingredients for 1 color in a food processor or blender and pulse until thick and creamy like soft serve ice cream. Pause between every few pulses and use a spatula to push down the ingredients.
Pour the purple nice cream into the bottom of two tall glasses, and place in the freezer while you make the next layer. Freezing between layers will ensure the colors don't bleed or blend together. Repeat with each remaining color.
Once finished with the layering, freeze for 1-2 hours until thicker and spoonable.
