Place the sweet potatoes in a steamer pot over boiling water and cook for 3 minutes. Add the apples and continue to cook another 3 minutes or until fork tender.
Place the apples, sweet potato, cheese and cinnamon in a food processor and puree until smooth. Bring a large pot of water to a boil.
Place a wonton wrapper on a clean surface. Place a tablespoon of the puree in the middle of the wonton. Take the four corners of the wonton wrapper and lift them up around the puree.
Pinch the wonton wrapper corners together, just over the puree, to seal. Moisten your fingers with a little water and pinch once more to ensure a good seal.
Repeat process with remaining wonton wrappers. When all 10 are formed into purses, place 3-5 at a time in the boiling water, and cook for 2 minutes.
Remove with a slotted spoon to a plate, cool and serve.
