Ingredients

coconut milk

Green Curry Paste

Potatoes (I used Yukon Gold), cut in bite size cubes

onion, diced

carrots, diced
▢

Peas (you can use frozen peas)

Chicken
Breast, cut in bite size pieces
Instructions
Place the coconut milk and curry paste in a medium saute pan over high heat. Whisk them together until combined.
Add the potatoes, bring to a boil, reduce to a simmer and cover.
Cook for 4 minutes.
Add the onion and carrots, cover and cook for 3 minutes.
Add the chicken, cover and cook for 4-5 minutes or until all the vegetables are fork tender and the vegetables are cooked through.
Cool and serve.
