Chicken Curry for Babies

Ingredients  

  • 1 Cup coconut milk
  • 2 Tsp Green Curry Paste
  • 1 Cup Potatoes (I used Yukon Gold), cut in bite size cubes
  • 1/4 Cup onion, diced
  • 1/3 Cup carrots, diced
  • 1/3 Cup Peas (you can use frozen peas)
  • 1 Chicken Breast, cut in bite size pieces

Instructions 

  • Place the coconut milk and curry paste in a medium saute pan over high heat. Whisk them together until combined.
  • Add the potatoes, bring to a boil, reduce to a simmer and cover.
  • Cook for 4 minutes.
  • Add the onion and carrots, cover and cook for 3 minutes.
  • Add the chicken, cover and cook for 4-5 minutes or until all the vegetables are fork tender and the vegetables are cooked through.
  • Cool and serve.
