Simple Roast Chicken

Ingredients  

  • 1 4 Lb Chicken
  • 1/2 Small Lemon, cut in quarters
  • 2 Garlic Cloves, peeled and smashed with the side of a knife
  • 1 Tsp kosher salt
  • 1 Tsp olive oil

Instructions 

  • Preheat oven to 400 degrees.
  • Line a sided sheet tray with foil.
  • Rinse the chickens well and pat dry.
  • Place chicken on the sheet tray, tuck the wings behind the chickens back.
  • Rub the chickens with olive oil, season inside and out with salt and tuck garlic and lemon quarters inside the chicken.
  • Bake for 1 hour.
  • Remove from oven and allow chicken to rest for 10 minutes.
  • Serve.
