Chicken, Peach & Bell Pepper Skewers

These Chicken, Peach and Bell Pepper Skewers are marinated in a tangy, sweet marinade that is beyond delicious. They're a perfect recipe for your summer BBQs!

Ingredients  

  • 2 tablespoons dijon mustard
  • 2 tablespoons honey
  • 2 tablespoons cider vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1 1/2 pounds chicken breasts, cut into 1 1/2 inch pieces
  • 2 peaches (firm, but ripe), cut into 1 inch pieces
  • 1 bell peppers, cut into 1 inch pieces

Instructions 

  • Place the first 5 ingredients in a large bowl and whisk to combine.
  • Preheat oven broiler or grill to high heat.
  • Add the chicken, peaches and bell pepper pieces to the marinade and toss to coat.
  • Marinate covered in the refrigerator up to 2 hours.
  • Cook skewers under the broiler or on the grill for 6 minutes, turning halfway through.
  • Serve.
