Radish, peeled and grated (about 2 cups)

Yellow, Red or Orange Bell Pepper, thinly sliced

Scallion, diced (use the entire scallion, white and green)
Instructions
Place the first 5 ingredients in a bowl and mix to combine.
Place the grated radish in several layers of paper towel and squeeze out excess water.
Place all of the vegetables in a large bowl and toss together.
Pour the vinaigrette into the bowl and toss to coat.
Serve.
