Place the first 7 ingredients in a bowl, stir to combine and set aside.
Season the lamb chops with salt on both sides.
Heat 1 tbsp of oil in an ovenproof large sauté pan over medium-high heat and cook lamb chops for 4 minutes on each side (for medium to medium rare).
Allow the lamb to rest for 5 minutes.
Serve with sauce.
