Small Red Onion, sliced thin

Mozzarella Cheese, shredded & divided

Tortillas, flour, spelt or whole wheat
Instructions
Heat oil in a sauté pan over medium heat and sauté onions and salt for 6 minutes or until golden. Remove and set aside.
Place one tortilla in a dry pan over medium heat, sprinkle 1 cup of cheese over tortilla and top with half the cooked onions.
Top with another tortilla and heat through, about 3 minutes on each side or until cheese is melted and tortilla is slightly toasted.
Repeat with the remaining ingredients for the second quesadilla.
Cut into wedges and serve.
