Cranberry Bran Muffins

Ingredients  

  • 1 1/2 Cups all purpose flour
  • 1/2 Cup whole wheat flour
  • 1/2 Cup Wheat Bran
  • 1 Tsp baking powder
  • 1/2 Tsp baking soda
  • 1/2 Tsp kosher salt
  • 1 1/2 Cups buttermilk
  • 1 Tsp vanilla extract
  • 2 large eggs
  • 1/2 Cup honey
  • 1/4 Cup oil
  • 1 Cup dried cranberries

Instructions 

  • Preheat oven to 350° F.
  • Combine the first 6 ingredients in a bowl.
  • In a separate bowl, whisk the remaining ingredients except for the cranberries.
  • Slowly combine the dry ingredients into the wet, and then stir in the cranberries.
  • Pour batter into greased mini muffin cups about 2/3 of the way up and bake for 15 minutes (or 2/3 of the way up into regular size muffin cups and bake for 20 minutes).
  • Cool and serve.
