Tuna Pasta Salad

Ingredients  

  • 3 tablespoon lemon juice
  • 1 tablespoon dijon or yellow mustard
  • 2 tablespoon mayonnaise (or vegan mayonnaise)
  • 1 teaspoon kosher salt
  • 2 8 ounce cans freshwater tuna
  • 4 cups pasta, cooked
  • 1/2 cup carrot, peeled and shredded
  • 1/2 cup cucumber, seeded and diced
  • 1/4 cup dill pickles, diced
  • 1 tomato, seeded and diced

Instructions 

  • Place the first 4 ingredients in a bowl and whisk to combine.
  • Mix the remaining ingredients in a large bowl, pour the sauce on top and stir combine.
  • Refrigerate until ready to serve.
