When it comes to flavor and texture, though, it’s all about my one secret weapon: milk! It may sounds simple, but I try to keep the dish as light as possible and adding milk gives it that creamy texture, so that every bite of the sauce cuddles the noodles in every single bite.

We drink milk every single day for a few simple reasons: when the kids drink an 8 ounce glass of milk I know they’re getting 8 grams of protein plus essential nutrients like calcium, potassium and vitamin D. Plus, it’s incredibly hydrating and penny for penny, milk offers more nutrition than just about any other drink.

The fact that I keep milk, pasta, cheese and pumpkin on hand at all times is a bonus to the ease of making this mug pumpkin mac and cheese. Don’t have a microwave? You can also prepare it on the stove. It’s all about the seasons and making a dish that fills your heart and soul.
