BREAKFAST:  

As always, lots of smoothies for breakfast. This week we’re making Chai Beauty Greens SmoothieCotton Candy SmoothieMango Spiced SmoothieChocolate Peanut Butter Smoothie. Then for a weekend breakfast treat we’re making homemade Peanut Butter and Jelly Pop Tarts.

SNACKS:

I’m going to bake some Gluten Free Banana Bread this week for us to snack on. It’s one of our absolute favorites! We’re also making Frozen Yogurt Fruit Bites and Crunchy Granola Bites with fresh berries. And for a savory, healthy snack we’re dipping veggies into Black Bean Hummus.

LUNCH: 

Even though I don’t have any “babies” anymore (!!) we’re going to have these Baby Frittatas this week for lunch! Plus Sandwich Kabobs and Avocado Toast. And then of course don’t forget The World’s Greatest PB+J. I’m not exaggerating when I call it “World’s Greatest”.

DINNER: 

SundayMexican Lasagna is super simple and a fun recipe to get kids involved in the kitchen. We’re having it with some Air Fryer Veggies on the side.

Monday: Wild Mushroom Pasta with a big Apple, Pear and Goat Cheese Salad for a quick and easy meatless Monday meal. I love this pasta so much!

Tuesday: It’s still a little chilly in Los Angeles so taking the opportunity to make more soup! This week we’re making Celery Root Soup with Brown Rice Cakes for Tuesday dinner. I’ll probably also roast up a tray of whatever seasonal veggies I can find at the farmers market this week.

Wednesday: Perfect Roast Chicken (making two and using the second one for Mu Shu Chicken later in the week) with Sugar Snap Pea and Asparagus Saute and Yukon Gold Mashed Potatoes. Simple, healthy and delicious!

Thursday:  Moo Shu Chicken using the second roast chicken from Wednesday. You could also just buy a rotisserie chicken from the grocery store. Serving with steamed rice and tortillas to wrap things up. This recipe truly comes together in under 20 minutes. A mid-week lifesaver!

Friday: I’ve been making this Greek Style Shrimp a ton we are obsessed. Serving it with some crusty bread from the farmers market to sop up all the tomatoes. Plus these Oatmeal Chocolate Chip Sea Salt Cookies for dessert!
