Hope you all are having a fun and spooky pre-Halloween weekend! Here’s my family’s meal plan for the week. Hope it’s helpful to you and yours!

BREAKFAST:

Smoothies once again for breakfast. This week we’re making Immune Boosting Very Berry SmoothieVanilla Cinnamon Date ShakeChocolate Peanut Butter Smoothie and Cherry Vanilla Smoothie. For weekend brunch we’ve got a Sheet Pan Pancake that everyone will love!

SNACKS:

Snacks for the week are going to be Cookie Dough Bites, Peanut Butter and Jelly Pop Tarts, Cucumber Stackers, and Oatmeal On-The-Go Bars.

LUNCH:

On the lunch menu this week, we’ve got Nut Free Granola with greek yogurt and fresh fruit, plus Cauliflower Crusted Grilled CheeseShakshuka and Vegetarian Spring Rolls.

DINNER:

Sunday: Stir-Fried Chicken in Lettuce Cups with a side of Brown Rice Cakes or you could do a simple steamed White Rice for the side.

Monday: Turkey Bolognese with a big Apple, Pear and Goat Cheese Fall Salad on the side.

Tuesday:  Making these fun Spooky Grilled Cheese and Roasted Tomato Soup to fill up on before trick-or-treating. Here are some more Halloween Recipes if you’re looking for inspiration!

Wednesday: Making tacos with Slow Cooker Mexican Pulled Pork and toppings like lettuce, Pico de Gallo and Guacamole.

Thursday: One Pot Spiced Chicken with Toasted Couscous for Thursday. This meal is really easy to make, and the cleanup is even easier!

Saturday: Order in from local restaurant!
