Another week, another meal plan! We’re starting to get into early summer produce and I’m so excited to make some recipes with those this week.
Of course for breakfast we’ll be making smoothies. This week we’ve got my Crazy Healthy Smoothie, Blueberry Chia Smoothie and Cacao Banana Date Smoothie from the Smoothie Project Cookbook. We’re also planning on a fun Banana Split Breakfast for the weekend.
Fingers crossed there are some watermelons at the market this week. If so we’re definitely having Watermelon Fries for a snack. Also making Chewy Granola Balls again (the kids are obsessed), Frozen Bananas on a Stick and Spinach Cake Muffins.
Monday: Gado Gado Bowls with Forbidden Rice and Market Vegetables from One Potato. This dish mixes steamed rice, tofu, and seasonal vegetables in a zesty Indonesian carrot curry sauce for a perfect #meatlessmonday meal!
Tuesday: Salmon Teriyaki with Soba Noodles and Edamame from One Potato Box. This meal is one of our favorites. The salmon is SO fresh and delicious!
Thursday: One Potato Tacos with Guacamole, Pico de Gallo, and Slaw! A tried and true family favorite.
Saturday: Order in from local restaurant!
