Another week, another meal plan! We’re starting to get into early summer produce and I’m so excited to make some recipes with those this week. 

BREAKFAST:

Of course for breakfast we’ll be making smoothies. This week we’ve got my Crazy Healthy Smoothie, Blueberry Chia Smoothie and Cacao Banana Date Smoothie from the Smoothie Project Cookbook. We’re also planning on a fun Banana Split Breakfast for the weekend.

SNACKS: 

Wanted to keep it simple and yummy this week for snacks so we’re making Chocolate Zucchini BreadProtein Cereal BarsBanana Wheat Germ Muffins, and Paper Bag Popcorn to snack on throughout the week.

LUNCH: 

For lunch we’re making a couple salads — Strawberry Spinach Salad and Kale Avocado Salad. Then keeping it fun with Whole Wheat Pizza Bagels and Caprese Quesadillas.

DINNER:

Sunday: Asian Sautéed Shrimp is the easiest and yummiest shrimp recipe you’ll ever make. We’re having Un-Fried Rice and Steamed Broccoli on the side.

Monday: For meatless Monday we’re making Lentil Mushroom Bolognese with a farmers market salad with Citrus Herb Vinaigrette.

TuesdaySalmon Burgers with simple Sweet Potato Fries and these crispy Cast Iron Brussels Sprouts.

Wednesday: Cheesy Turkey Meatloaf Bites are not your mama’s meatloaf. They’re so yummy! We’re pairing them with Mascarpone Mashed Potatoes and Sugar Snap Pea and Asparagus Saute

Thursday: Fish Tacos with Guacamole, Pico de Gallo, and Slaw! We love this recipe, and it’s something a little different than your classic beef or chicken tacos.

Friday: We’re doing a fun spin on our Friday pizza night and making Pizza Stuffed Potatoes! Laying out the toppings and letting everyone make their own. Plus some Air Fryer Donuts for a weekend treat!
