This week’s meal plan is bright and cheerful! What are you most looking forward to making?

BREAKFAST:

We’re making some bright smoothies this week including the Bright Green Smoothie, this gorgeous Blueberry Chia Smoothie, a pink Dragon Berry Smoothie, and then some Tropical Lassis! Also planning to make a Sheet Pan Pancake and let everyone make their own pancake square!

SNACKS: 

Healthy but fun was the theme for snacks this week so we’re making Frozen Bananas on a Stick, Carrot Snack Sticks, Paper Bag Popcorn and Crumb Cake Donuts!

LUNCH: 

For lunch we’re keeping it simple with Vegetarian Sandwich on a StickEgg and Crispy Potato NestsAvocado Toast and Tostada Salad.

DINNER:

Sunday: The kids love these Chicken Parmesan Meatloaf Bites (and so do hubby and I). Pairing them with Grilled Lemony Asparagus and then Raspberry Cheesecake Jars for dessert.

Monday: Meatless Monday calls for this Vegetarian Skillet Lasagna. You make it all right on top of the stove and it couldn’t be easier. We’re adding a Winter Farmers Market Salad on the side too.

Tuesday: Arepas with Pulled Poblano Chicken are super flavorful and couldn’t come together faster! Plus, it’s a really fun recipe to get the kids to help with.

Wednesday: No Work Chicken lives up to its name, and by midweek I’m looking to do as little work as possible when it comes to cooking. We’re pairing it with Cast Iron Brussels Sprouts with Pomegranate and Garlic (we can’t get enough of these Brussels!) and Perfect Brown Rice with toasted sesame seeds.

Thursday: Slow-Cooked Green Chili Pork Tacos with Guacamole and Pico de Gallo. I’ll make some Black Beans and Perfect Brown Rice to have on the side too. Everyone loves taco night!

Friday: Pizza Balls with Strawberry Spinach Salad! We love any form of pizza at the end of the week.

Saturday: We’re ordering in from a local restaurant.

While I have used your recipes for quite some time now (I even have your Weelicous cookbook!), I just recently found these plans. They couldn’t have come at a better time as I have been in a rut with my meal planning lately. We’ve been loving the smoothies and snacks. I just wrote out a plan for next week and I am incorporating even more with lunches and dinner ideas. Thanks again! Please keep them coming! 🙂
