There are some vegetables that look down right intimidating. Celery root (also known as celeriac) is one of them. Over 10 years ago I was hiking with my friend Alex, who at the time was a very successful private chef. Alex was always having to create healthy recipes for her clients and one of her favorite ingredients to use was celery root. Up to that point I had only cooked with celery root once or twice, so I had no idea about all of the incredible dishes it could be used to create. She described to me making a pureed celery root dish similar to mashed potatoes, with a creamy texture and mild celery flavor.
A half cup serving of celery root has around 40 calories to boot, making it a really low fat and carb root vegetable as well.
