Quite a while ago now, I received an email from a Weelicious user named Katie kindly thanking me for our baby frittata recipe. I felt a great deal of pride reading that the only way her son would eat eggs was when she made him baby frittatas. She reciprocated by giving me the most genius recipe idea: green cookies.

Katie’s mother had made a them for her when she was a baby and she continues the tradition by making them for her son. If your toddler or even older kids protest against eating greens, you have to get them to try these! I call them Green Treats only because I like for my kids to associate cookies with dessert, but no matter what you call them, I guarantee your family will call them delicious.

I made a dozen of these green treats when I was testing them out. I got one, and the kids along with my husband polished off the rest. They’re that good AND super healthy! Besides their green color, you’d never know they’re packed with a healthy veggie. I made a second batch and froze them so we can have them on hand as snacks for the coming weeks. They stay fresh in the freezer for about 4 months. I just take them out, defrost them and heat them up as I need.

Green Treats

Ingredients  

  • 1 large bunch of swiss chard, stems removed and chopped (spinach will also work)
  • 2 eggs, whisked
  • 1 cup white or whole wheat matzo meal (whole wheat or plain-breadcrumbs will work too)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1 tablespoon sesame seeds
  • oil for cooking

Instructions 

  • Cook the chard in a steamer pot of boiling water for 6-8 minutes or until tender.
  • Chop the chard very fine.
  • Place all the ingredients, except the oil, in a bowl and combine thoroughly.
  • Using 1 tbsp of the mixture, form into small patties.
  • Heat a thin layer of oil in a saute pan over medium heat.
  • Cook the patties for 3 minutes on each side or until golden.
  • Serve.
  • *After step 4, place patties on a baking sheet and freeze for 30 minutes then place par-frozen patties in a ziploc bag, label and freeze up to 4 months. When ready, defrost in fridge for 24 hours and follow steps 5-7.

  1. Just made this! My son loved it with ketchup. Despite reducing salt to 3/4 tsp the patties were still salty 🙁 I guess the best ratio is 1/2 tsp or may be even less. They are very healthy tough 😉

  3. I too have been meaning to try this recipe forever. We just got a huge bunch of chard from our CSA and I finally made them. My 3 year old said yum the minute he bit one. But my toughest one to please- the hubby ate several and told me ” they were really good.” Happy mom, happy wife tonight!!!

  4. Do they smell good? My child smells everything before trying it. If he doens’t like the smell, he won’t event taste it.

  5. The sesame seeds add a nutty flavor and a nice slight crunch to the texture. They are also packed with Calcium, Iron, and Vitamin B1!

  6. Quick question – why add the sesame seeds? looks? do they really add that much nutritional value? Have I just never had fresh enough ones, or do they really add any flavor?

  7. I just pulled some out of the freezer, nuked them on defrost quickly, then cooked them up, tasted great! Follow her directions to freeze them!

  8. just made these for lunch and the family loved them…even my junk food junky husband. I chopped the chard before steaming (it made everything fit in the steamer and was much easier than chopping afterwards) and served it with sour cream. I’ll note that I liked the thinner patties that were more crunchy! Thanks for another great recipe!

  9. Wow, these are excellent! I’ve been meaning to make them for awhile now and finally did (now regretting we didn’t try them sooner!) My picky 17 mo wolfed one down and I am thrilled, knowing how much chard was packed into just one. Love ’em!

  10. These really are that good! Mine were a little too soggy to form firm patties, though. Next time I’m going to get the water out of the steamed chard with the salad spinner.

  12. Probably a stupid question but when steaming the swiss chard, do you put it in a steamer basket or submerge it in the boiling water?

  13. These are **really** good. I am out of sesame seeds and have been craving sage (I miss it in the summer) so I added some sage. It was really good, but since my daughter wanted to dip them into marinara sauce, I will probably try basil or rosemary next time. I think my husband will like them, too! I think these would be good made bite size as cocktail party finger foods.

  14. YUMMY! My kids gobbled these up. I used Collard Greens and served them with ketchup for lunch. The sesame seeds add a nice flavor. My son asked if we could call them Delicious Treats! Thank you for another great way to eat our greens.
