How to Make Green Bean Salad with Mustard Vinaigrette

The Ingredients

  • Green beans
  • Dijon mustard
  • Apple cider vinegar
  • Extra virgin olive oil
  • Kosher salt
  • Sliced almonds, toasted

The Instructions

1. Cook the Green Beans: Bring a large pot of salted water to a boil. Add the green beans and cook until tender, about 6-8 minutes. Drain and rinse with cold water or ice to stop them from continuing to cook.

2. Make the Vinaigrette: In a small bowl, whisk together the mustard, vinegar, olive oil, and salt.

Recipe Tip

You can buy sliced almonds already toasted at most grocery stores, but if you can’t find them, you can toast your own. Just add them to a sauté pan over medium heat and toast for about 5 minutes until golden brown.

Can I Make This Dish Ahead of Time?

For sure! In fact, I’m planning on making this for Thanksgiving this year as an alternative to Green Bean Casserole. I’m going to make the green beans and the dressing separately the day before and just mix them right before dinner!
