Gluten-Free Shrimp and Rice Noodle Stir Fry. It’s a literal and figurative mouthful, isn’t it? Normally I don’t actually include the words gluten-free in the names of my gluten-free recipes, however there’s a very good reason why I re-christened this dish, which has long been a favorite of Weelicious readers. I’ll explain.
Years ago, when I set out to write my first book, Weelicious: One Family. One Meal., I knew that I needed someone brilliant to photograph the food — an artist who possessed a unique sense of whimsy as well as a passion for family and food. For months I searched tirelessly for that ideal photographer, but eventually became discouraged that the person I envisioned did not exist. That’s when I discovered Maren Caruso’s work and in an instant fell madly in love. Maren turned out to be everything I hoped for and more, and I’ve since had the pleasure of having her shoot both Weelicious cookbooks in my home. She has an elusive combination of talent, intelligence, magic, heart and soul, and her passion for what she does is infectious.
Now, along with some of the most talented gluten-free recipe developers and writers in the food world, Maren and her partner Erika Lenkert have created a new quarterly magazine called GFF (Gluten-Free Forever). GFF is for people who don’t want to compromise quality, flavor, or fun while enjoying a gluten-free lifestyle.
Having seen first hand the physical struggles of friends with gluten intolerance as well as hearing the problems of Weelicious readers over the years, I’m so inspired by what these amazing ladies have set out to accomplish. GFF will not only be informative, with hundreds of easy to prepare recipes, but it will feature Maren’s mouthwatering images (which I adore and can never get enough of).

When you read more about it and see how informative and well designed the magazine (which you can receive in paper or on your tablet) is going to be, it will knock your socks off.
All that being said, Maren and Erika need your help. They are so close to their goal of making GFF a reality and I urge you to check out their Kickstarter page whether you are gluten-free or not, especially since their fundraising campaign is in it’s final days and they need all the support they can get to put this wonderful publication out into the world (you also get some pretty great things in return for your support). But back to this Shrimp and Rice Noodle Stir Fry which Maren photographed herself this week. It’s the kind of tasty, simple, bright and yes, gluten-free, recipe that my family loves (and they don’t have the slightest idea it’s missing the gluten). It goes to show when you’re enjoying a variety of foods like the one in this recipe, a gluten-free diet doesn’t have to feel like a sacrifice at all.
