When Catherine told me her son loves spice I knew he would love this recipe for Chicken Satay with Spicy Peanut Sauce. It’s super easy to make and older kids can help skewer the chicken. My toddler twins like to call them Thai tacos since you wrap the chicken up into lettuce leaves. I like to make this as a snack after soccer practice because it’s loaded with lean protein and fun to eat. The spicy peanut sauce recipe calls for 1/2 teaspoon crushed red pepper flakes so reduce the amount or omit altogether for young kids.

Chicken Satay with Spicy Peanut Sauce

Ingredients  

  • 1 cup plain greek yogurt
  • 1 teaspoon minced fresh ginger
  • 1 clove garlic, minced
  • 1 tablespoon curry powder
  • 1/2 teaspoon kosher salt
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch strips
  • 14 wooden skewers, soaked for 30 minutes

Peanut Sauce:

  • 3 tablespoons creamy peanut butter
  • 4 tablespoons coconut milk
  • 1 teaspoon red curry paste
  • 1 tablespoon lime juice
  • 2 teaspoons soy sauce
  • 2 teaspoons brown sugar
  • crushed roasted peanuts for garnish

Instructions 

  • Preheat oven to 400F.
  • In a medium bowl, combine the yogurt, ginger, garlic, curry powder and salt. Stir to combine well.
  • Place the chicken strips in the yogurt marinade and turn until well coated. Cover and refrigerate for at least 30 minutes (up to overnight)
  • Thread the chicken strips onto the soaked skewers, and place them on a foil-covered baking sheet. Bake the chicken strips for 14 minutes, flipping once half way through.
  • Serve immediately with Peanut Sauce.
  • Peanut Sauce
  • In a small saucepan, combine the peanut butter, coconut milk, curry paste, lime juice, soy sauce, and brown sugar. Stir to combine, and heat over medium-low heat until the mixture begins to simmer, stirring constantly. Transfer to a small serving bowl and top with the crushed peanuts.
  • Note: You can add more coconut milk if you prefer a thinner sauce.

  3. This looks like a great recipe. One question: in the comments before the recipe directions you say the recipe for the peanut sauce calls for crushed red pepper, but it isn’t listed in the ingredients. There is red curry powder, but not red pepper. Mistake, omission, or other?

  5. My family enjoys Thai seafood soup (sometimes called Tom Yum) and green curried vegetables (including eggplant) and tofu.

  6. We All really like Mexican food, and a lot of us like Chinese and Asian food. We espessially like stir fry, in fact, where having that tonight for dinner!

  8. Thai Food is amazing. My favorite restaurant in Charleston, SC where I live is a Thai place called Basil. The Basil Chicken spicy is my favorite! And the coconut chicken soup… I can’t remember the fancy name for it though 🙂

  9. My younger son recently discovered that he LOVES chicken satay; however, my first attempt to make it for him was a complete failure. He’s told me he only likes satay in New York, where he first had it. Hopefully, I can redeem myself with this recipe!

  13. Add the lime juice in with the rest of the sauce ingredients! If you like it without you can certainly omit it! 🙂

    I made this last night and the “chicken version” was a definite winner, according to my husband and 4 year old, and I can vouch for the “tofu version” which was equally delicious!

    I am a vegetarian so, as I do whenever a recipe allows, I did a tofu version as I could use the same marinade mix and the same peanut sauce…. I just doubled the marinade recipe and split it into two bowls – one for the tofu and one for the chicken. Then everything else was the same – two baking sheets, my double oven :-), etc.

    One question about the lime juice in the peanut sauce. It is on the ingredients list but not mentioned in the directions, so I ended up forgetting about it even though I noticed the problem when I first read the recipe. I need to make more peanut sauce tonight for the leftovers so what do I do with the lime juice? Add it to the pan in the beginning with all the other ingredients to bring to a simmer or do something else with it (like pour it over the sauce at the end and mix it in)? Help!… and another big “Thank You” for something I can add to the repertoire.

    BTW, do you happen to have a barbecue chicken version or a Japanese/Teriaki version? My husband and son loves chicken on a stick! 🙂

  15. I have been a fan of thai food ever since I tried shrimp with bean thread noodles at a local restaurant. I have only 1 thai dish (thai chicken in phyllo shells) in my cooking repertoire but would certainly LOVE to add more. Thanks!

  62. As a teacher of world culture enrichment classes for kids (see URL) I am always cooking and trying new recipes so that my students get to *taste* a culture in addition to learning about one. Many times I find the recipes (especially Asian ones) fairly complicated…but I try to go for it anyway! I would love nothing more than to have this cookbook in my hands not only for my classes, but for my family as well. We are going to Thailand in February for two weeks and how fun it would be to introduce some Thai dishes at home (vs. eating out) before we go! I will also be teaching a series of Thailand culture sessions in my son’s 4th grade class for their upcoming “International Day” that I co-chair.   66. I lived in Italy for three years so Italian food (REAL authentic Italian food) is my favorite cuisine. I am really trying to incorporate more Thai food into our meals b/c of the nutritional benefits of ginger and curry.

  67. Our favorite is a Senegalese dish called Maffe. It consists of sautéed beef cubes, with onions, carrots, cabbage and potatoes (you can replace the beef with other vegetables to make a veggie dish and is still delicious!). The sauce is made out peanut butter and concentrated tomato paste, a bit diluted in water or chicken/beef stock. Serve with white rice. Delicious and my kids love it!!

Although I will not be able to have the Peanut Butter Sauce, I am looking forward to trying the Chicken Satay recipe this weekend!!!
    I was just placed on this diet last Friday and it has been VERY difficult. I found your One Family One Meal Recipe Book in the library and so far it is the closest thing to food I am able to eat because you are using healthy, fresh foods. I am not able to use certain foods such as peanut butter, hard cheeses, onion, egg plant, peas, avocados, raspberries, chocolate, raisins and SO much more, but beyond that, it foods with nitrates, nitrites, caffeine artificial sweetners and MSG and foods which have “flavorings” and “natural flavorings”.
    I am thankful to have found your book and website with book with recipes that I am able to eat!
