Garlic Roasted Red Potatoes are my latest obsession. They’ve been served for dinner at my house at least once a week lately, and they will most certainly be making an appearance on my Christmas dinner table. Look at that crispy skin, slightly crunchy edges, and all that scrumptious garlic and salt flavoring. You can just taste them, can’t you?

If there’s one ingredient that makes its way onto every holiday table, it’s definitely potatoes. They’re inexpensive, easy to prepare, and go with just about any flavor you can toss or serve them with. Potatoes can be mashed, smashed, nested, fried… you name it, the potato can do it! 

All you’re going to need for this recipe are red potatoes, minced garlic, kosher salt and olive oil. Cut the potatoes into cubes, I prefer mine in about one inch pieces but you can definitely cut them smaller. Take the potatoes, toss them with the minced garlic, kosher salt and olive oil and put them on a baking sheet. I personally like to mix them straight on the baking sheet but you might prefer to toss yours in a bowl first. There’s no wrong way, it’s just your preference! Next, put them in the oven at 425F degrees for 45 minutes and voila! The perfect side dish for not only holidays, but really whenever you’d like. 

Dip them in your favorite aioli or eat them as is. This dish comes packed with so much flavor, a side sauce isn’t necessary but always welcome if you’d like.

Ingredients  

  • 2 pounds red potatoes, cut into chunks
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 teaspoon kosher salt

Instructions 

  • Preheat the oven to 425F degrees. 
  • Place all the ingredients on a baking sheet and toss throughly to coat. 
  • Roast potatoes for 45 minutes or until fork tender and crisped.
